Before you start

A blender or food processor will be very useful for this recipe.

Method

  1. Put the frozen berries in a blender. Add the lemon juice and icing sugar, then mix at maximum speed. With the blender running, pour in the egg whites and continue to mix until homogeneous.
  2. Transfer the mixture to a container, cover and chill in the freezer for at least 1 h before serving.
  3. Garnish with a few berries and serve.

Great, simple recipe. My blender also had a hard time with the frozen berries so I added about half a cup of plain yogurt. Delicious!!

@aek1: Sorry that this recipe did not work for you. The measurements are right, i.e for 4 servings you should use either 2 1/2 cups or 300 g of berry mix. This way you could use the measurement method that works best for you, i.e. either read on the package the weight of your product or put it in a cup and measure. The recipe is very tolerant and works as well if you put a little more or a little less berries. I suspect that in your case you used berries that had been in your freezer for a long time and were all lumped together. Hence, texture and taste will be penalized. As you can read in other comments, both in FR and EN, other reviewers had excellent results and this recipe has 99% that would make it again (with 84 reviews sofar). Wish you better luck on your next recipe.

This is my go-to recipe for dessert topping. It's super quick and easy and everyone loves it. It tastes much better than store bought sorbet.
