Thai Turkey Stir-fry

Ingredients

??? canola oil ???
??? garlic, finely chopped ???
??? gingerroot, grated ???
??? turkey breast, boned, cut into strips ???
??? yellow or red sweet peppers, julienned ???
??? frozen peas, defrosted ???
??? unsweetened coconut milk, light ???
??? lime, for juice and zest ???
??? soy sauce ???
??? fresh cilantro, finely chopped ???
??? ground pepper to taste [optional] ???

Method

  1. Heat large skillet over medium-high heat. Add oil and sauté garlic, ginger and turkey for about 10 minutes or until turkey is lightly browned and no longer pink on the inside.
  2. Add red pepper, sauté for 4 minutes.
  3. Stir in coconut milk, lime zest, lime juice, soy sauce and curry paste. Bring to boil. Reduce heat and simmer for 8 minutes or until the sauce is slightly thickened. Add peas and simmer for another 1–2 minutes.
  4. Season to taste with black pepper.
  5. Garnish with cilantro.
