Ingredients

4 tsp olive oil 20 mL
1 1/2 onions, finely chopped 300 g
2 cloves garlic, crushed
3 tbsp sunflower seeds 26 g
1/2 cup walnuts, chopped 50 g
2 tsp ground cumin 5 g
1 cup chickpeas/garbanzo beans (canned), rinsed and cooked 250 mL
1 1/2 cup Parmesan cheese, grated 80 g

Before you start

A blender or food processor will be very useful for this recipe.

Method

  1. Preheat oven to 180°C/350°F. Lightly oil a bread pan.
  2. In a pan, cook onion and garlic in the oil. Add sunflower seeds, nuts, and cumin. Cook for 1 or 2 minutes. Add chickpeas and tamari sauce.
  3. Pour the mixture in the prepared bread pan.
  4. Sprinkle cheese over the pâté. Bake in the middle of the oven for 30 min.
  5. Remove from oven and let cool for 10 min. Place mixture in a blender and purée.
  6. Mold the purée into a terrine mold and sprinkle with chopped parsley if desired.

Observations

The pâté can be kept in the refrigerator for about a week.
