Baked Fruit Oatmeal

Ingredients

??? rolled oats ???
??? brown sugar, firmly packed ???
??? salt [optional] ???
??? soy beverage, unsweetened, fortified ???
??? eggs size large, lightly beaten ???
??? margarine non-hydrogenated or butter, melted ???
??? vanilla extract ???
??? blueberries, frais ou congelés ???

Method

  1. Heat oven to 350° F. Spray 8 (6 oz) custard cups or ramekins with non-stick cooking spray. Arrange on rimmed baking sheet.
  2. In large bowl, combine oats, brown sugar and salt. Mix well.
  3. In medium bowl, whisk together rice dream, eggs, butter, vanilla and almond extract. Add to dry ingredients. Mix well until blended. Spoon into cups. Stir berries into each cup, dividing evenly.
  4. Bake until knife inserted near center comes out clean, about 23 to 26 minutes for Quick Oats, 25 to 30 minutes for Old Fashioned. (Centers will not be completely set.). Cool 10 minutes.
  5. Enjoy!

Observations

Try substituting different types of fruit such as peaches or apples. If your phosphorus and potassium levels are good you can add a tbsp of vanilla yogurt to the top or a sprinkle of toasted sliced almonds.
